Baked Feta, tomatoes & Jimmy Nardellos

For 2 people I used half a block of feta but for 4 or more I would recommend a whole block


 

½ block feta

1 punnet cherry tomatoes, or large tomatoes cut into bite size pieces

1 bunch jimmy Nardellos, chopped into bite size pieces

1 red or brown onion, sliced into wedges

1-2 cloves garlic

Salt & pepper

Dried oregano (or any herbs of choice)

Olive oil


 

Place feta in the centre of your oven pan, scatter around tomatoes, peppers, onion and garlic. Season well and shake the pan to ensure everything is coated. Place in a preheated oven for 15-20 minutes until tomatoes begin to burst and the feta is golden. The last 5 minutes I turned my oven too grill just to brown the veggies a bit more.

In the videos they smashed the cheese around and made a sauce but with the feta I used it stayed quite firm so I just divided it between our plates. Sprinkle with fresh herbs, parsley and basil work nicely.



 

We paired it with some mixed grains (rice, quinoa, buckwheat & amaranth) and silverbeet sautéd with garlic. Feel free to get as creative as you like, adding olives would be my next choice. It is probably most commonly served with pasta.
