Baked tomatoes, olives & mozzarella

Serves 2

Prep time: 20 minutes

Bake time : 20 minutes



1 c cherry tomatoes, sliced in half

¼ olives, sliced in half

2 cloves garlic

2 Tbsp olive oil

Salt & pepper

1 bulb fennel

1 onion

2 Tbsp butter

Salt & pepper


¼ c Fresh Mozzarella, cubed

1 eggplant, sliced and grilled (optional)

Pasta to serve (optional)


Preheat the oven to 180 º C.

Slice the tomatoes, olives and garlic and place in baking dish. Drizzle with olive oil, salt and pepper. Place in the oven for 15- 20 minutes.

Finely slice the onion and fennel and place in a saucepan with melted butter. Sauté until soft and lightly golden. Once they are cooked down transfer to the baking dish with tomatoes and give it a stir. Added the cubed mozzarella and return to the oven for 5 minutes or until cheese has melted.

At this point grill your eggplant and cook your pasta if using. Goran added pesto through his pasta and loved it.
