Banana Oat Protein Pancakes

These have become our weekend treat breakfast. I love how simple they are and how filling they are. We use a protein powder but even without they would still work and be a good start to the weekend. Goran eats his with peanut butter, jam & berries and I go for a little butter and fresh berries. Enjoy


Prep Time: 5 minutes

Cook Time :10 minutes - keep warm in the oven or stack them as you go along to keep them warm

Makes: 5-6 large pancakes



1 c oats

4 tsp baking powder

pinch salt

pinch cinnamon

2 scoops protein powder (We use RAW pea protein)

2 eggs

1 banana

¼ - ½ c milk of choice*



After making these pancakes a few times I have found the easiest way is to add the dry ingredients to the blender first and whizz until the oats have turned to a flour consistency. Then in a mixing bowl, mash the banana, egg and milk and pour the dry ingredients into the bowl. Alternatively you can add all the ingredients to the blender but I have found that so much of the mixture sticks inside of the blender making it difficult to get every last drop.

* Start with ¼ c milk but add more if mixture is too thick.

Melt a knob of butter in a pan and add large spoonful of mix to pan. Goran likes large pancakes so I used 2 spoonfuls per pancake. :)

Update: We went blueberry picking over the weekend and added them to the mix, just poked a few into each pancake as it cooked. Also tried a waffle version, same mix in the waffle machine. Worked well but I prefer the pancake version.
