Goran and I have been going on the weekend to pick blueberries at a nearby property. The blueberry shrubs are 35 years old and bursting with berries. Its a fun weekend activity and provides us with fresh blueberries for the week. We have so many we do freeze them as well.
Goran believes there is no better muffin than a blueberry one so I set out to find the best recipe to make. I think this is a pretty darn good recipe.
Makes 12 muffins

½ c (115grams) butter, softened
¾ c brown sugar
1 t vanilla
2 c flour
1 t salt
2 t baking powder
2 t cinnamon
½ c milk
2 c blueberries (fresh or frozen)
3 T sugar (for sprinkling on top)
Preheat oven to 190 º C.
In a large mixing bowl beat butter and sugar until light and fluffy, add eggs one at a time and blend to incorporate well. Stir in vanilla. In a measuring cup, measure flour, then add salt, baking powder and cinnamon. Sift ½ dry ingredients into bowl and ½ milk. Stir to combine then add the remaining ½ dry and ½ milk. Once the mixture is well combined add the blueberries and fold them through.
Butter your muffin tins and place scoopfuls of the mixture in each cup. Sprinkle the tops with sugar. Place in the oven and bake for 20-25 minutes until knife inserted is clean. Remove from oven and allow to cool 10-15 minutes in tray until using a rubber spatula to remove the muffins and allow to cool completely. Goran already ate two by this stage.
