Caprese Salad with Quinoa and Spinach

Goran and I spend the day at the lake on Saturday and didn't arrive home til nearly 8pm. We normally eat dinner earlier, so we were both hungry and I wasn't sure what to make. This was whipped up quickly and was healthy & satisfying.


 

Serves 2

Prep Time 10 minutes

 

1 c cooked quinoa

2-3 handfuls spinach leaves, roughly chopped

2-3 heirloom tomatoes, sliced

4-5 cherry tomatoes, sliced

1 ball mozzarella, sliced

Fresh basil, torn


Drizzle :

olive oil

Balsamic glaze

Salt

Pepper

hemp hearts


 

Divide spinach between two plates, sprinkle with quinoa and then place the tomatoes and mozzarella on top.


Season well and enjoy
