Cauliflower base pizza
Don't get me wrong, nothing can really beat a great pizza homemade base but this is a fun way to use cauliflower and pack even more veggies into a pizza.
1 head cauliflower
½ c grated cheese
salt & pepper
any additional herbs - rosemary, oregano, parsley, thyme
Roughly chop up your cauliflower and add it to a food processor. Blitz until a fine rice consistency forms. If any large pieces are not blending remove them and chop them smaller before adding again.
Place cauliflower rice into a steamer or microwave safe bowl. Steam for 5-8 minutes or microwave 3-4 minutes until cooked. Taste test a spoon to make sure its soft (ideally not soggy). Allow mixture to cool for a while before placing in a tea towel to ring out the extra moisture. Once the liquid is removed place in a mixing bowl and add the cheese, eggs & seasonings.
The mixture should come together enough to squeeze a ball. You can always add another egg if you used a big cauliflower (but you don't want it to be runny). Pour the mixture on a baking sheet on baking paper. I use my hands to push it flat and create a rounded edge. (you can make it into circles or a rectangle)
Place in preheated oven for 10-12 minutes until its starting to turn golden. Remove and top with any pizza toppings you like. We used chipotles, tomatoes, onions, zucchini, mozzarella & basil.
