Chickpea & Snow Pea Red Curry
Chickpea and Snow Pea red curry
Serves 2
Prep time: 10mins
Cook time : 20 mins
Ingredients:
1 clove garlic, chopped
1 T grated ginger
½ onion or 2 spring onions, chopped
2 T red curry paste
1 can coconut milk or ½ can coconut cream with ½ c water
1 ½ c chickpeas or one can chickpeas
A handful of coriander
1 bunch snow peas, chopped into bite size pieces
Fresh basil and chilli flakes to serve
Directions:
Add 2 T oil to a pan, then add garlic, ginger and onion. Sauce a few minutes until fragrant. Add curry paste and stir to combine. Add chickpeas and mix thoroughly. Add coconut milk and let simmer 10-15 minutes. Once the mixture has thickened slightly add the snow peas and coriander, allow to cook a few minutes until their colour turns bright green.
To serve:
Serve on rice or noodles. We love the tricolour rice from Brown Owl.
Garnish with fresh basil and chilli
