Chocolate chip Banana Loaf
There are plenty of recipes out there for a great banana loaf. I went through 4 recipes and combined elements I like/had available in my kitchen. It was a winner. Chocolate chips are always festive but not needed. I made buttermilk by just adding a tsp of vinegar to a ¼ c milk and letting it sit a few minutes.
⅓ cup coconut oil (melted) or butter
2 Eggs room temperature
¼ cup agave syrup or honey
1 teaspoon vanilla extract
¼ cup Yogurt plain or buttermilk
¼ teaspoon salt
1 teaspoon baking soda
½ tsp baking powder
1.5 cup White Whole wheat flour about 180 gms
¼ cup mini chocolate chips, I used dark chocolate
Preheat the oven at 350°F/ 175°C . Grease a 9×5 loaf pan with butter or coconut oil.
In a large bowl, add the peeled banana. Mash them with a fork or potato masher.
Add the rest of the wet ingredients and mix well. If using honey you can warm it in a pot to make it easier to mix.
Measure out the whole wheat flour, add the rest of the dry ingredients and mix. Fold it all into with the wet ingredients and chocolate chips. Avoid over mixing.
Once the batter is well mixed, pour it into the prepared pan, spread it evenly. Sprinkle some chocolate chips on the top if you like.
Bake for 45 minutes or until a toothpick inserted comes out clean. Cool in the pan for 10 minutes.
Remove the banana bread from the loaf pan on a wire rack.
Slice and enjoy!
