Chorizo & Zucchini Tacos
½ onion or a few spring onions
2 chorizo sausage, cut into cubes (could sub for any meat or tofu)
2-3 zucchini, cut into cubes
1 cup cooked rice
1- 2 chipotle pepper in adobo sauce (depending on how spicy you like it)
1 baby gem lettuce for shells
tortillas
coriander
grated cheese if you desire
Tacos are one of our favourite meals, they can be so versatile and they come together quickly. I also love that everyone can build them differently with a range of toppings.
Something about zucchini always makes me think of summer tacos. I like just using a lettuce leaf as my shell but Goran uses a tortilla and a leaf!
Chop onion, chorizo and zucchini, add to a sauté pan with a little oil. Season with salt and pepper and cook until nicely golden. Add cooked rice and chopped chipotle peppers and a tablespoon or 2 of the abodo sauce. Taste and adjust seasoning to your liking.
Serve with tortillas, lettuce, coriander & cheese. Toppings could include sour cream, avocado, pickled radish, salsas, and so much more. Get creative!
