Crunchy Broccolini Salad

Today while we were out looking for a new pepper grinder we stopped in at a Salvation Army and the kind man at the front was handing out small packets of craisins. At first I put them in the glove box of the car and thought they would be a handy snack if we are ever hangry. For dinner I was planning a roast broccoli salad, but after such a hot day I didn't feel like turning on the oven which sparked an idea for a raw broccoli salad. I used to make one for a previous boss which was mayo based. Very very tasty, Ill include the recipe as well. But this one I made tonight was mustard based and hit the spot. Glad I had the craisins in the glove box to pull this salad together. The original dressing has honey in it but I find the sweetness from the craisins is sweet enough.


3-4 cups chopped broccoli, florets and stems

¼ -½ cup dried cranberries, or more if you like 1/2 cup roasted sunflower seeds ½ red onion, finely sliced Salt, to taste

1/3 cup olive oil 1 tablespoon apple cider vinegar

1 tablespoon dijon mustard Salt and pepper, to taste

1 tablespoon honey or maple syrup if you want it to be a sweeter dressing.


Chop the broccoli and place in a serving bowl, add craisins, onion and toasted seeds. Mix dressing ingredients in a mixing bowl and whisk to combine. Drizzle over salad and toss well to combine. Adjust seasoning to your taste.
