Cucumber Chutney

½ tsp whole pepper corns

4 whole cloves

1 ½ kg cucumbers

750 g onions

2 cups sultanas

4 ½ c brown sugar (she cuts in half)

3 tsp salt

1 tsp ground ginger

½ tsp ground allspice

½ tsp cayenne pepper

2 ¼ c vinegar


Tie the peppercorns and cloves in a piece of muslin. Peel and slice the cucumbers and onions and place in a saucepan with the sultanas, sugar, salt, ginger, allspice,cayenne, vinegar and muslin bag. Bring it to the boil stirring frequently. Reduce the heat and simmer for 1 ½ 1 ¾ hour or until thick. Continue to stir. Pack and seal. Enjoy cucumbers all year round ;)
