Cucumber & Red Onion Salad
This feels like a fairly simple recipe yet I think it's important to highlight an ingredient sometimes, especially when we won’t have them for much longer. Cucumbers have been a wonderful summer staple and I will sure miss them until next summer.
2 cucumbers
¼ red onion
Handful micro greens
Dressing
2 Tbsp olive oil
4 Tbsp apple cider vinegar
1 tsp sugar (if you like)
Salt & pepper
Slice cucumbers into thin rounds. Slice onion thinly in moon shapes. In a small jar add the dressing ingredients and shake well. Pour as much as you like over the cucumbers and onions. They can sit covered in the fridge for a few hours to marinate. Top with micro greens and hemp hearts.
