Farm Salad with Miso dressing


Feel free to adjust ingredients to what you have, this was everything in the fridge. I always think cutting vegetables different ways for a salad can effect the whole feel of the salad. For this salad I chose to finely slice the greens and grate the veggies.


Salad

Cos Lettuce

Komatsuna

Radish

Carrot

Apple - adds a little sweetness

Spring onions

Snow peas

Coriander (mint or basil would be great additions too)


Dressing

½ juice lemon

1 T miso

2 T tamari (or soy)

2-3 T olive oil

grated fresh ginger


Finely slice the cos and komatsuna, spring onions, snow peas and coriander. Grate the radish, carrot and apple. Toss all ingredients in a large bowl and dress to serve. A sprinkle of sunflower seeds, pumpkin seeds or hemp seeds add a nice crunch.


We served it with Bostock's new chicken sausage (Lemongrass, Chile and Lime) and whole wheat fusilli pasta.
