Kale & Apple Salad

5-6 large kale leaves - I used curly kale but any kind will work

1 apple

2 Tbsp toasted sesame seeds


Dressing

½ lemon - I zested the peel into the salad

2 Tbsp olive oil

1 Tbsp apple cider vinegar

Salt & Pepper



Tear or cut the tough stem from the leaves. Roll up the leaves and roughly chop. Using your hands start to massage the kale. Add to a large salad bowl and sprinkle salt and massage another minute or two until the leaves begin to soften. Julienne or grate the apple and place in the bowl. Add the toasted seeds and toss well.

In a small jar add the dressing ingredients and shake well. Pour over salad and adjust seasoning if needed.
