Kale & Caramelised Onion Salad
1 bunch kale
1-2 onions, red or brown (this is Gorans favorite part)
½ block feta, goats cheese, or blue. cheese
Fresh herbs (basil, parsley, coriander, dill)
2 Tbsp olive oil for grilling onions
1 Tbsp balsamic vinegar
Salt and pepper
Sunflower seeds (or any seed or nut of choice)
Start by preparing the kale. Holding the stem in one hand use the other hand to shred the leafy greens off the stem. Alternatively use a knife to chop out the tough stem.
Finely chop the kale and place in large salad bowl. Drizzle with a splash of oil (a little goes along way) and crack of salt and use both hands to massage the kale. This will tenderise the leaves and make them much easier to eat. Leave aside while you prepare the onion. Either dice or slice the onion and place in a medium pan with olive oil and salt and pepper. Allow to cook down and soften. Add a splash of balsamic and stir to coat. Once they are finished add them to the salad bowl with kale. Mix well. Top the salad with fresh tomatoes, feta and any fresh herbs.
We paired the salad with BBQ steak and roasted potatoes. Would also go well with rice or quinoa.

If you didn't have fresh tomatoes it would also go well with roasted beets
