Komatsuna & chickpea stir fry
1 bunch komatzuna ( I left it whole but you could chop in into small pieces)
broccolini or green beans
½ onion (red or brown)
1 c chickpeas (soaked & cooked or 1 can)
½ packet soba noodles
2 Tbsp peanut butter (we use crunchy but smooth would work too)
2 Tbsp miso
1 Tbsp soy sauce or tamari
1-2 Tbsp water to thin
1 tsp chili flakes (adjust to your taste)
Cook noodles according to packet instructions.
In a small bowl add all the sauce ingredients, mix well and adjust seasoning to your taste.
Heat a medium size pan with a drizzle of oil. Add the onion and chickpeas to the pan. Allow to cook until golden, add the komatsuna and any other veggies you'd like. Once the komatsuna is bright green add the sauce and the cooked noodles. Stir well and serve hot.
