Marilyn's Sticky Date & Coconut Cake

1 cup dates

1 cup water

1 tsp baking soda

4 T butter

1 beaten egg

1 tsp vanilla

1 c brown sugar

1 ½ c flour

1 tsp baking powder

Preheat oven to 180

Grease 20cm round cake tin with butter - I used a bundt pan with baking paper on the inside ring so it doesn't stick.

Place the dates, water and baking soda in a small saucepan on low heat and boil until dates are soft. set aside.

Cream the butter and sugar (don't be alarmed if it seems sugary) then beat in the eggs and vanilla.

Sift the flour and baking powder, then combine the butter mixture.

Add the date mixture.

Pour into cake tin and bake for 35 mins until it feels firm, remove from the oven.

While baking make the topping (you can double the topping mix if you want extra goodness!!)

1 c shredded coconut

1 c brown sugar

60 g butter

2tbsp milk

put all ingredients into a saucepan. warm this mixture gently until pourable then pour over cake and bake for another 25 minutes or until an inserted skewer comes out clean.

Cool on a rack at room temp then serve. Goes well with vanilla bean ice cream
