Oat & Buckwheat Pancakes

Gotta love pancakes on a Saturday morning. It certainly doesnt happen every weekend but we do try to make weekends a little slower morning in the garden.
These were great, light fluffy & very filling. You can top them with anything you like, maple syrup, honey, peanut butter, jam, butter or fruit are just some of our favourites.
1 c whole oats (old fashioned)
1 tsp cinnamon
1 ¼ c almond milk
2 Tbsp melted butter
⅔ c buckwheat flour
2 tsp baking powder
In a large mixing bowl combine oats, cinnamon and milk, allow to sit 15 minutes, until the oats soften. If you wanted you could blend the oats for a finer consistency pancake but I liked the whole oats.
Add the egg & butter and mix well. fold through the flour, baking powder & salt.
Heat a large skillet, add a bit of butter for grilling then spoon the mixture on the pan. We made medium large pancakes and this mix made 7 pancakes.

(2nd time making these and I didn't have a full cup of oats, I used ¼ c oats and 1 c buckwheat flour and they still worked perfectly)
