Peanut Zoodle Salad
I had been humming and hawing what to do with a large marrow. I like stuffing them, and using them in lasagna but today I decided to turn it into noodles. It worked very well since I scooped out the seeds I was just left with the firm marrow. If you don't have a marrow you can make this same dish with 3-4 zucchini. The flavours of this are very similar to a cold soba noodles salad I have made before and the veggies are easy to adjust to what you have available.
1 marrow/ 3-4 zucchini
3-4 Jimmy Nardellos peppers / 1-2 capsicums
2 carrots
handful coriander, chopped
2 handfuls micro greens (~200 grams)
Dressing
4 Tbsp peanut butter (smooth or crunchy)
3 Tbsp water
2 tbsp tamari / soy sauce
1 tbsp rice vinegar / lime juice / apple cider vinegar)
3 tsp sriracha (depending on how spicy you like, for a mild spice I would start with 1 tsp)
Slice marrow lengthwise and use a spoon to remove the seeds. I then cut it into 3 even sections. I used the julienne setting of a mandolin to make the noodles.
Place in a large bowl, thinly slice the capsicums, grate the carrot and add the chopped coriander. Mix well, then add the micro greens and dressing
