Radish & Turnip Hash with spring onion, fried eggs and bacon
This recipe can be super flexible, add bacon and eggs to create a breakfast for dinner feel or serve as a side dish with salad and grilled meat.
Radish & Turnip Hash with fried eggs and bacon
Serves 2
2 to 3 small turnips
4 to 5 small radishes
Coarse sea salt
Freshly ground pepper
2 tablespoons oil
1 spring onion, trimmed and chopped
2 tablespoons unsalted butter
If using:
4 eggs
4 slices of bacon
sprinkle feta
If using bacon, fry bacon until crispy and set aside.
Add chopped turnips and radish to pan and cook as below.
Set a large cast iron skillet over medium-high heat.
Add oil and butter and when hot, add turnips and
radishes, and a pinch each sea salt and pepper.
Turning vegetables only once or twice, cook 8 minutes
or until golden-brown. Turn heat to medium and fold
in spring onions, cooking for about a minute. Push
vegetables to the sides, melt butter in the center of pan,
and add the eggs, salting each individually.
Finish with feta or cheese of choice and chilli flakes to taste.
Serve immediately.
