Roast beetroot, kumara & Halloumi
2-3 large beetroot
1-2 medium kumara or sweet potato
1 block halloumi
Drizzle of oil
Salt & Pepper
Cilantro to serve
Preheat oven to 180 º C.
Slice the beetroot into wedges or bite size pieces. (you can peel them if you like but I don't mind eating the skin). Place on a roasting dish and drizzle with oil, salt and pepper. Place in the oven for 30 minutes until they are starting to caramelise. Slice the sweet potato in circles or bite size pieces and place on the dish with the beets. Shake the pan around to season them lightly, add more oil, salt and pepper if necessary. Replace the dish in the oven and roast a further 20 minutes. Finally remove the baking dish and place the sliced halloumi over the veggies. Turn the oven to grill and replace the pan. Keep a close eye on the cheese as you want it to lightly grill without burning. Remove from the oven and garnish with salad greens or herbs of choice.
