Rocket & Red Cabbage Salad

This is a simple but tasty salad that can be thrown together in minutes.

120 g rocket

¼ small red cabbage, finely sliced or grated

Dressing

1 Tbsp whole grain mustard (or dijon)

1 Tbsp honey

2 Tbsp vinegar

4 Tbsp olive oil

Salt & Pepper to taste

Mix the two greens, and add any other salad leaves you like, mix the dressing in a small bowl and drizzle over the salad. Enjoy as a side to any meal.
