Rocket Salad

1 bag baby rocket

½ cup cooked grains (quinoa, rice, buckwheat)

¼ c toasted nuts & seeds (almonds, sunflower, pumpkin, sesame)

1 apple, thinly sliced

3-4 radish/turnips/cucumber, sliced in circles

Olive oil

Apple cider vinegar

Salt & pepper


I like to cook a large batch of grains that will be served hot for the first meal and then be kept in the fridge for a salad the next day. In this case I mix rice, quinoa, buckwheat but you could use any grains you like.


Toast your nuts and seeds and allow to cool slightly while you prepare the other ingredients. I used radish, apple & cucumber but you could use any veggies you like.


In a large salad bowl toss all the ingredients together with an easy vinaigrette. I have been using little Shaggery apple cider vinegar which has been great.


Give it a good toss and serve.
