Salmon Soba Noodles

150 g smoked salmon (or any cooked fish)
½ pack of 270g organic soba noodles
2 T olive oil (or sesame oil)
1 clove garlic, thinly sliced
1 T grated ginger
2 T miso paste
1 tsp chilli flakes (depending how spicy you like)
2 T soy sauce
100-200g spinach, chopped
Sliced radish and chopped coriander to serve
Heat olive oil in large pot, add garlic & ginger until just simmering, add soy sauce and miso, and 4-6 cups of water (I boiled the kettle just to speed it up) . Once the liquid is simmering, taste test and adjust as needed. Add noodles and cook 3-4 minutes, add spinach, and simmer until leaves are wilted. Add flaked salmon to warm. Serve into bowls, top with radish slices and coriander.
