Smoked Salmon Pasta
Serves 2
20 minute meal
150g smoked salmon
50 g feta (cheese of choice or skip the cheese)
2 Tbsp finely chopped sun-dried tomatoes
150 g spinach
100 g pasta of choice
Salt & pepper to taste
chilli oil or olive oil to drizzle
After a long day I was ready for a comforting meal that wasn't going to take too long to throw together. This was perfectly simple, filling and full of protein.
Bring a large pot of water to boil. Once boiling add pasta and cook as packet instructions indicate. In the last minute of cooking I added the sundried tomatoes to soften them. If you are using the kind soaked in oil I would skip this step and add them once the pasta is drained.
Drain your pasta and return to large pot. Add in spinach and give it a good stir. Cover with a lid to allow the heat to steam the spinach lightly. If you prefer you could cook the spinach separately and add it but I like the spinach to still have some texture.
Once the spinach has wilted, crumble in the salmon and feta. Season to taste. We always like cracked pepper and a drizzle of chilli oil.
Serve immediately or allow to cool and serve as a chilled pasta dish. Adjust quantities as need to suit larger families or dinner parties.
