Spring Salad

Spring salad

Serves 2 as a main or 4 as a side salad


3 radish - cut into wedges

3 turnips - cut into wedges

2 handfuls of snap peas - cut into bite size pieces

2 spring onions - chopped

Handful any soft herbs, basil, parsley, dill, coriander

Chop all ingredients into mixing bowl


3 Tbsp soy sauce

2 Tbsp lemon/lime juice

½ tsp honey

1 smashed clove garlic

1 tsp grated fresh ginger

1 Tbsp sesame seeds

Mix all ingredients and toss through salad


1 cup brown rice

2 cups water or stock

Cook rice as per packet instructions, can serve hot or cold


4 x 6minute soft boiled eggs


Freshly ground pepper and chilli flakes
