Szechuan Green Bean & Snow Peas

A classic Szechuan green beans with added snow peas and brocollini. If you don't have any of the veggies the green beans alone are just as perfect.


Prep time :10 minutes

Cook time :10 minutes

Serve 3-4 as a side dish

 

Ingredients:

2 Tbsp oil

1 bunch green beans

1 bunch snow peas

4 Tbsp soy sauce

2 Tbsp grated ginger

3 cloves garlic, finely chopped

2 spring onion (1/2 onion) chopped

Sprinkle sesame seeds to garnish

 

Instructions:


Heat a pan with oil, add the green beans first and shake until they begin to crackle. Cook until beans turn bright green and then add snow peas. Continue to cook for a few minutes until both are nearly soft. Mix together the soy, ginger, garlic, onion and pour over the hot beans in the pan. Sauté for a minute or two to make sure all the veggies are covered in sauce.


Transfer to a serving platter and garnish with sesame seeds. I served ours with grilled tofu, brown rice and sunflower shoots.
