Tomato & Zucchini Frittata

Serves 2

Prep: 10 minutes

Bake: 15 -20 minutes



1 c cherry tomatoes

2 zucchini

5 eggs

¼ c milk

¼ c grated cheese (parmesan, cheddar or mozzarella)

Olive oil

Salt and pepper


Slice zucchini and place in a large saucepan with olive oil. Shake pan well to coat zucchini in oil and then allow to grill on one side before flipping. Once they are nicely grilled transfer to a small baking dish. Added chopped cherry tomatoes on top of the zuchhini. In a medium size mixing bowl add the cracked eggs, milk, cheese, salt and pepper. Give a good whisk then pour over the zucchini and eggs.

Place in the oven and bake for 15-20 minutes until egg mixture rises and is firm to the touch.

Remove from the oven and add some basil.

We served this with a green salad with hemp hearts & balsamic dressing. Sweet and simple weeknight meal. Plus a side of basil pesto.
