2 spring onions (½ onion)
1 clove garlic
½ c cooked buckwheat, or quinoa, or rice
1 tsp paprika
1 tsp cumin
2 Tbsp cooking oil
Preheat oven to 180 ºC.
Slice zucchini in half lengthwise and use a spoon to scoop out the seeds, keep anything you scoop out to add to your mix. Chop onion and garlic and zucchini bits. Heat oil in a pan and add onions, garlic and zucchini, allow to cook 2-3 mins until fragrant. Add spices and cooked buckwheat and mix until warm. Use a spoon to scoop mix into empty zucchini. Sprinkle over feta and place in the oven for 15-20 minutes, until feta is melty and zucchini are tender.
This is just a guideline for many amazing combinations you can make. Change the seasoning, the starch or the cheese to mix it up.
