Zucchini Ribbon & Tomato Salad
Serves 4 as a side dish
Prep time: 15 minutes
punnet of cherry tomatoes / 2-3 medium tomatoes
handful basil leaves
2 Tbsp Hemp hearts
2 Tbsp pesto
2 Tbsp olive oil
Using a peeler or a mandolin, thinly slice the zucchini into ribbons.Slice tomatoes in half or wedges and place in salad bowl. thinly slice the turnips and place in bowl. Roughly chop basil leaves.
In a small bowl mix pesto with additional olive oil to thin the dressing. Drizzle over the salad and sprinkle on hemp hearts. Garnish with micro greens or pea shoots!
